Rooted in a 1930s Family Origin Story
The origin of Su Roastery traces back nearly a century. In the 1930s, the founding family's great-grandfather lost his fortune to a bohemian lifestyle and needed a way to support his family. He began roasting coffee beans and chickpeas at home, starting a family roasting tradition. Decades later, his descendants revived that legacy under their family business, Su Holding, turning it into a modern specialty coffee brand.
Live In-View Public Roasting
Opened in central Skopje (on Ul. Jordan Mijalkov), the flagship location features an open, in-view roasting floor. Visitors can watch the full roasting process live on-site while sipping their drinks, filling the café space with fresh aromas.
A Local Pioneer in Skopje’s Specialty Coffee Scene
Historically, coffee culture in North Macedonia has leaned heavily on traditional Turkish or Italian espresso styles, with most specialty cafés importing pre-roasted beans from abroad. Su Roastery directly imports raw green beans from single-origin regions (including Brazil, Colombia, Ethiopia, Guatemala, Peru, and Jamaica) and roasts them in-house locally.
Exclusive Family Hospitality Network
Su Roastery's beans are served across Su Holding's curated network of venues. Beyond its main Skopje location and its outlet in Diamond Mall, the roastery supplies sister venues in Ohrid, including Su Hotel, Su Rooftop Restaurant, and Liquid Cafe in Ohrid's Old Town.

The space is designed with minimalist, industrial-chic aesthetics featuring polished concrete, natural light, and modern decor.
