At any hour of the night, especially on weekends, you will find a diverse crowd—from partygoers in high heels and suits to taxi drivers and night-shift workers—all standing shoulder-to-shoulder waiting for hot pastries.

Silbo is open 24 hours a day, 7 days a week, 365 days a year. It doesn’t matter if it’s Christmas, New Year’s Eve, or the middle of a summer heatwave; Silbo’s ovens are always hot, and the doors are always open.
Home of the Legendary Burek and Jogurt
While they sell dozens of types of pastries, the undisputed king of Silbo is Burek (flaky, layered pastry filled with cheese, minced meat, or spinach). To eat it like a true local, you must pair it with a bottle of cold, drinkable Jogurt (a savory, liquid yogurt). Eating hot burek and drinking cold yogurt on the counter outside Silbo is a classic Skopje ritual.
The Famous Simit Pogača (Bread inside Bread)
Silbo is one of the best places to try Simit Pogača, a culinary curiosity unique to Skopje. It is essentially a sandwich where the filling is... more bread. Specifically, it is a soft bun (pogača) stuffed with a greasy, flaky phyllo pastry (pita). It sounds incredibly heavy, but it is a beloved local breakfast.

The most famous Silbo location is situated on the corner of Partizanski Odredi Boulevard and Rooseveltova Street, right on the edge of Debar Maalo—Skopje’s most famous bohemian neighborhood. This makes it the perfect transition point between the neighborhood's traditional taverns and the rest of the city.
The Silbo vs. Palma Rivalry
For years, there has been a friendly but fierce rivalry in Skopje between Silbo and Palma (another famous bakery located nearby). Locals are often fiercely loyal to one or the other. Silbo fans swear by the freshness of their dough and the generous amount of fillings, particularly in their sweet croissants and savory gevrek (sesame bread rings).
The Smell is a Geographical Landmark
