Origins
When the original bakery opened here in 2019, a premium-priced, high-concept pastry shop looked far too offbeat for Budapest. Instead it became an overnight sensation, pulling in crowds of local foodies. Founder Péter Dormán studied the craft in Copenhagen and brought that minimalist, high-technique Scandinavian baking ethic back to Hungary. When the 2020 pandemic wiped out foot traffic and café wholesale orders overnight, the bakery didn't fold; it launched home delivery and rolled out playful new shapes, including cube-shaped croissants packed with pecans and caramel, that carried it through lockdown. Success spread from there to a second Budapest location, then sister bakeries in Bulgaria and Canada.
The croissant story
The dough alone takes four days to produce. It's fermented in three separate stages, one of them a traditional sourdough starter, which gives the pastry its complex, faintly caramelly richness and real structural integrity. A precise roll-and-fold then builds a flawless honeycomb of exactly 27 laminated layers of butter and dough. The flour is custom wheat grown in Sárosd by Dormán's own father, blended with French 84% fat butter.
What to order
The menu changes every three months to follow the season, but the signature pistachio croissant never leaves: a dense cream of roasted pistachios and premium Valrhona chocolate, the pastry that carried the name abroad. Everything comes crisp, buttery, and generously filled.

Know before you go
The place is a minimalist Scandinavian-style space, with limited seating, so best for quick breakfast and coffee.
Come early, it gets busy, and the best pastries sell out fast. Note that there's strict no-laptop policy.
