Pioneers of the Sourdough Revolution in Skopje

Before Joy opened, Skopje’s bakery scene was dominated by traditional pekari serving heavy, greasy burek (savory pastry) and standard white bread. Joy was one of the very first places in the city to introduce slow-fermented, artisanal sourdough bread and high-end French-style pastries. They educated the local palate on the beauty of wild yeast, crust depth, and airy crumbs.

If you visit Joy on a Saturday or Sunday morning, you will almost certainly have to wait in a line that wraps around the block. The Joy Queue has become a local weekend ritual. Despite the wait, locals and tourists flock there to get their hands on fresh-out-of-the-oven goods before they sell out—which usually happens by early afternoon.

Home of the Cruffin and Pistachio Croissant

Joy is legendary for its laminated dough. They popularized the Cruffin (a croissant-muffin hybrid filled with various creams) in Skopje. However, their absolute bestseller is their pistachio croissant, which is generously filled with rich, real pistachio cream and topped with crushed pistachios. It is widely considered by locals to be the best pastry in the city.

A Third-Wave Coffee Hub

Joy is not just a bakery; it is a premier destination for third-wave specialty coffee. They source high-quality beans from top European roasteries and serve expertly crafted espressos, flat whites, and filter coffees. Their baristas are highly trained, making it a favorite spot for coffee purists.

The Glass Wall Open Kitchen

One of the coolest design features of Joy is its open-concept kitchen. A massive glass wall separates the seating area from the baking station. Customers can sip their coffee while watching the bakers meticulously laminate dough, shape sourdough loaves, and glaze pastries in real-time. It adds a wonderful sensory and theatrical element to the café experience.

Minimalist, Scandinavian Aesthetic

In a city where many older cafés feature heavy, dark, traditional Balkan decor, Joy opted for a bright, ultra-modern, Scandinavian-inspired design. Featuring raw concrete, warm light wood, minimalist metal fixtures, and plenty of green plants, it serves as a visual oasis and is highly popular with the city’s Instagrammers, designers, and creatives.

A Hub for Digital Nomads and Creatives

Because of its aesthetic, great coffee, and energetic vibe, Joy has become the unofficial headquarters for Skopje’s freelance community, remote workers, and artists. On weekdays, you will find the communal tables filled with people working on laptops, sketching, or holding casual business meetings.
